Here's what's on our dinner plates this week. Our schedule got all out of whack last week, resulting in spoiled meat and wilted lettuce! So my goal is to plan simpler meals this week and not waste anything!!
Thursday- Chicken Casserole (see below); salad
Friday- pizza night
Saturday- meatball subs; raw veggies
Sunday- grill out; corn on the cob
Monday- blueberry pancakes; bacon
Tuesday- Baked Chicken Quesadillas; chips and salsa
Wednesday- Pierogi Beef Skillet; cheddar biscuits
Chicken casserole (recipe from my friend Emily- thanks!)
3 large boneless chicken breasts ( I boil them and then shred them to chicken salad consistency)
1 can of cream of chicken soup
1 can of cream of celery soup
1 box of instant stuffing
1 cup of chicken stock from boiled chicken (or you can use canned broth or bouillon)
2 cups of shredded cheddar or colby cheese
Combine cooked chicken, stuffing mix, both cans of soup, chicken stock and 1 cup of shredded cheese in a large bowl and mix well.
Spread mixture in a 9x13 pan and cook at 350 for 30 minutes. I sprinkle the remaining cheese on top of the casserole in the last 5 minutes before I remove it.
This is great to make the night before and cover and stick in the fridge for the next night.

Tuesday- Slow Cooker Fajitas; Baja roasted corn (from Market Day, a school fundraiser)
Wednesday- Slow Cooker Veggie Soup; corn muffins

Menu Plan Week 10
Where, oh where has this week gone?? Last week didn't go as planned (meal-wise), so some of the items listed here are repeats from last week. That's ok, just less I have to buy at the grocery store this week!
Thursday- crockpot parmesan pork roast, corn, crescent rolls
Friday- Dinner out for my birthday!!
Saturday- manicotti and garlic bread
Sunday-sandwiches/you're on your own (it's nice that the kids are old enough to put together a quick meal for themselves now!)
Monday- blueberry pancakes and bacon
Tuesday- pork burgers on pita bread and green bean casserole
Wednesday- salad with grilled chicken strips, Hawaiian sweet rolls

Menu Planning Week 9
I'm changing up my posting schedule for weekly menu planning. It was getting confusing and frustrating for me to post on Monday, since I plan my menu and grocery shop on Wednesdays. So here you go, for this coming week!

Menu Plan Monday: 1/9/12
Monday- pancakes and bacon
Tuesday- ham and cheese wraps; french fries
Wednesday- Marebelle's casserole; crescent rolls; fruit salad

Saturday- Russian chicken (see below); salad
Sunday- pork chops with creamy mustard sauce (see below); asparagus; biscuits
Russian Chicken
Boneless, skinless chicken breasts, cut into even-sized chunks
1 8 oz. Russian salad dressing
1 16 oz. apricot preserves
1 pkg. onion soup mix
Place chicken in shallow baking pan. Mix remaining ingredients and pour over chicken. Bake uncovered at 325 for 1 -1 1/2 hours. Serve over rice.
Pork Chops with Creamy Mustard Sauce
1 lb. boneless pork chops
salt and pepper
1 tsp. vegetable oil
1/2 cup evaporated milk
2 Tbs. Dijon mustard
2-3 green onions, sliced
Flatten pork chops to 1/4 inch thickness. Season with salt and pepper.
Heat oil in non-stick skillet and cook pork on both sides until brown and cooked through. Remove from skillet and keep warm.
Reduce heat to low. Add evaporated milk, stir to loosen brown bits from the pan. Stir in mustard and green onions. Cook for 1-2 minutes until sauce is slightly thickened. Add pork back in and turn to coat them with sauce.

Menu Planning Monday Week 39

Chicken Tortilla Soup (using leftover chips and salsa from Wednesday)

Bacon and Onion Au Gratin
2 cup broccoli florets1 onion, roughly chopped
Sauce:
2 Tb butter
2 Tb flour
1/2 tsp salt
1/4 tsp rosemary
1/4 tsp pepper
1 1/2 cup milk
1 cup shredded swiss cheese
Topping:
2 cup bread crumbs
1/3 cup melted butter
1/4 cup chopped parsley
2 cup bread crumbs
1/3 cup melted butter
1/4 cup chopped parsley
Heat oven to 350. In saucepan melt butter, stir in flour, salt, rosemary and pepper. Cook about 30 seconds, then stir in milk. Stir constantly until boiling. Boil 1 minute. Remove from heat and stir in cheese until smooth. Set aside. Layer broccoli and onion in greased baking dish. Stir in cheese sauce. Mix topping in a small bowl and sprinkle on top. Bake 25-35 minutes.
We are in a rut with our Monday Breakfast-for-Dinner routine.
The kids love pancakes and bacon every week, but I am tired of it! Please share your go-to "breakfast anytime" ideas!

Menu Planning Week 36
Menu planning is a great organizational tool and really helps beats the "What's for dinner?" rush.
Monday- Happy Labor Day!
Cookout with my family.
Tuesday-
- chicken pot pie

- leftovers
- French Toast Casserole
- sausage links
- Frozen pizza (Mama Cozzi's brand from Aldi's- about $2.50 each!)
- Diet Coke Chicken (Recipe from "The Crock Pot Girls" on FaceBook, see below)
- rice
- asparagus
- Frito Texas Meatloaf (this was on last week's menu, but we were invited to my dad's instead. So on to this week's menu!)
- Mixed vegetables
Diet Coke Chicken
4 chicken breasts
one cup diet coke
one cup salsa
Poor everything over chicken; set to low and cook til dinner time (8 hours). The chicken shreds and is tender and yummy.

Menu Planning Week 35
Menu planning is a great organizational tool and really helps beats the "What's for dinner?" rush.
I find it almost essential to my daily quest towards CALM.
This week I don't have a full list, as I will be out of town for a couple of days.

- Breakfast Burritos with Fritos (This is a really basic recipe- I omit the ham, and add browned ground sausage, as well as chopped onions and green peppers. You can change it up as desired, but the Fritos really make a difference)
- Hashbrowns
Tuesday-
- Lasagna, frozen (from Gordon Food Service)
- Garlic Bread
Wednesday-
Fast Food :( Hubs and I will be traveling out of town for my consultation at the Cleveland Clinic.
Friday-
Ditto.
Saturday-
- Fritos Texas Meatloaf (using the remaining chips from Monday) **NEW RECIPE**
- Veggie mix- broccoli, carrots and cauliflower
- Fresh tomato slices

- Tuna-stuffed Tomatoes **NEW RECIPE- see below**
- Corn on the Cob
- BBQ Pork Chops
- Crescent rolls
- Mashed potatoes
Tuna-Stuffed Tomatoes
4 large tomatoes
2 5oz. cans solid white tuna, drained
2 ribs celery, thinly sliced
2 Tbs. capers, roughly chopped
1 Tbs. olive oil
1 Tbs. red wine vinegar
salt and pepper
1/2 cup fresh flat-leaf parsley
1. With a sharp knife, slice a very thin piece off the bottom and 1/4 inch off the top of each tomato. Scoop out seeds and pulp. Roughly chop pulp and tomato bottoms and place in large bowl.
2. Add the tuna, celery, capers, oil, vinegar, and 1/4 tsp. each salt and pepper, toss to combine. Fold in the parsley.
3. Spoon the tuna mixture into the tomatoes.
