Project 365: Week 2

Here is my week...

Sunday
My daughter (far right) attended a dance workshop with the Wright State dance team. She loved performing with them at halftime!

 Monday
My favorite new toy- a back scratcher! My coworker got it for me, as one of the more recent and annoying health issues I am having is a terrible rash!

Tuesday
PIzza Hut for dinner after cheer practice. The kids get coupons for free personal pizzas when they read a certain amount each month.

Wednesday
So dark and cold waiting for the bus in the morning!

 Thursday
Viv made a heart in our front yard. She was so excited to see a little snow.

Friday
My niece's soccer game. She's on the left, #13. She scored a goal and her team won!

 Saturday
Here we go with the cheerleading pics again! Remember those from last year? I do love their color combo this season- they are my high school colors!

Menu Plan Monday: 1/2/12

Welcome 2012!
I hope to get a little more creative in the kitchen this year by
finding easy and healthier recipes that my whole family
will enjoy. I always find new dishes to try through
the Organzing Junkie's weekly link-up!

Thursday- soup and grilled cheese

Friday- pizza night

Saturday- Roasted Sausage and Vegetables, Cheddar biscuits (again! Yes, they are soooo good!)

Sunday- leftovers

Menu Planning Week 36

Menu planning is a great organizational tool and really helps beats the "What's for dinner?" rush. 
I find it almost essential to my daily quest towards CALM.

Monday- Happy Labor Day!
Cookout with my family.

Tuesday-

  • Frozen pizza (Mama Cozzi's brand from Aldi's- about $2.50 each!) 
Saturday-
  • Diet Coke Chicken (Recipe from "The Crock Pot Girls" on FaceBook, see below)
  • rice 
  • asparagus
Sunday-
  •  Frito Texas Meatloaf  (this was on last week's menu, but we were invited to my dad's instead. So on to this week's menu!)
  • Mixed vegetables
Diet Coke Chicken

4 chicken breasts 
one cup diet coke
one cup salsa 

Poor everything over chicken; set to low and cook til dinner time (8 hours). The chicken shreds and is tender and yummy.

Menu Planning Week 35

Menu planning is a great organizational tool and really helps beats the "What's for dinner?" rush. 
I find it almost essential to my daily quest towards CALM.
This week I don't have a full list, as I will be out of town for a couple of days.

Monday- (breakfast for dinner day)
  • Breakfast Burritos with Fritos (This is a really basic recipe- I omit the ham, and add browned ground sausage, as well as chopped onions and green peppers. You can change it up as desired, but the Fritos really make a difference)
  • Hashbrowns
Tuesday- 
  • Lasagna, frozen (from Gordon Food Service)
  • Garlic Bread
Wednesday-
  • Fritos Texas Meatloaf (using the remaining chips from Monday) **NEW RECIPE**
  • Veggie mix- broccoli, carrots and cauliflower
  • Fresh tomato slices
Thursday-
Fast Food :( Hubs and I will be traveling out of town for my consultation at the Cleveland Clinic.

Friday-
Ditto.

Saturday-
  • Tuna-stuffed Tomatoes **NEW RECIPE- see below**
  • Corn on the Cob
Sunday-
  • BBQ Pork Chops
  • Crescent rolls
  • Mashed potatoes   
Tuna-Stuffed Tomatoes
4 large tomatoes
2 5oz. cans solid white tuna, drained
2 ribs celery, thinly sliced
2 Tbs. capers, roughly chopped
1 Tbs. olive oil
1 Tbs. red wine vinegar
salt and pepper
1/2 cup fresh flat-leaf parsley

1. With a sharp knife, slice a very thin piece off the bottom and 1/4 inch off the top of each tomato. Scoop out seeds and pulp. Roughly chop pulp and tomato bottoms and place in large bowl.
2. Add the tuna, celery, capers, oil, vinegar, and 1/4 tsp. each salt and pepper, toss to combine. Fold in the parsley.
3. Spoon the tuna mixture into the tomatoes.

    Project 365: Week 29

    Sunday- Yummy brunch at my dad's

    Monday- my Brown Eyed Susans finally bloomed.

    Tuesday- My local hospital. No biggie (I hope) but I had to have some heart testing done.

    Wednesday- Another piece of strange farm equipment. Any guesses?

    Thursday- Daily reading assignment.

    Friday- All the grandkids played at my grandparents house. Sarah enjoyed the pool and had it all to herself for a while.

    Saturday- Finally got to visit my friend and coworker and her new baby! Lucas was 8 days old today!

    Sunday- Birthday party for my baby- 6 years old!

    Monday- What I'm listening to.

    Tuesday- I bought a car! Totally unplanned. Kia Forte.

    Wednesday- Another bus stop pic.

    Thursday- Playing in the rain!

    Friday- Cool dress form at a mall in Columbus, OH. I'm here on business.

    Saturday- Outside with Starbucks and a book, all by myself- bliss!

    Project 365: Week 18

    What a busy week at our house! Between Easter, a school play, and a soccer game, I took 206 photos this week! Here's a peek:
    Sunday- All dressed up for Easter.

    Monday- Lazy napping kitty.

    Tuesday- Insane laundry day. I think I ended up doing about 5 loads.

    Wednesday- Will this rain ever end? I've never seen our backyard underwater in the 8 years we've lived here.

    Thursday- School play. Viv is in the middle, in the pin skeleton PJ's.

    Friday- Turtle ice cream cake for dessert at scrapbooking!

    Saturday- Morgan practicing before her first soccer game. We all got muddy!

    "Weekend of Fire" guest post

    This past weekend, my husband, Brian, and I were kid-free and decided to checkout the “Weekend of Fire” at Jungle Jim's. We had never been there and thought this was a good reason to make the drive. If you live in Southwest Ohio, Northern Kentucky or Southeast Indiana, you probably have heard of Jungle Jim's International Market and Event Center. One weekend each summer, Greater Cincinnati is the “center of the hot sauce universe “ at this Fiery Foods Show. This year boasted up to 75 booths of hot sauces, BBQ sauces, salsas, marinades, jerkys, dips, rubs and more from all across the USA.

    Being the condiment “connoisseurs” that we are, the inside door of our refrigerator displays a dozen or more bottles of various sauces, salsas, marinades, and mustards at any given time. Any dish is only as good as what it can be soaked in, brushed with or dipped in.

    So, we got our tickets and off we went. The “Weekend of Fire” show is a complete consumer oriented show. The vendors encourage tasting samples of their products which are available to purchase on the spot. When we arrived, we were handed our bag and headed upstairs. They were starting one of their many hot food contests of the weekend. The Hot Cracker Eating Contest consisted of eating 15 Texas Fire Crackers the fastest. One glass of water was on the table in case of choking-you drink it, you're disqualified. I tried a cracker at the vendor's booth. It was tasty and hot! I was not able to eat more than one. Later, we watched the Hot Lolly Contest- Be the first to finish the Hot Lix Candy lollipop. Other contests held throughout the day included: Bugcicle Eating- eat a Hot Lix Insect Sucker in 10 min; Eat Hot Horseradish on 10 slices of bratwurst; PB & J using hot peanut butter and hot jelly; Hot Ice Cream (ex. Chocolate with cayenne pepper), and others.

    While there were a few vendors whose goal was to see fire shoot out your ears and have you running out the door sick (Crazy Uncle Jester), most vendors claimed their products were more about flavor than heat, but, they were still hot! Ghost peppers (bhut jolokia) are the hottest in the world and there were several hot sauces and dry rubs made with them. I tried a VERY small piece of a brownie made with ghost peppers. It started out as a typical chocolate brownie, but then as any good ghost would do, the heat sneaks up on you, attacks and then haunts you for what seems like an eternity. I then realized the foresight of several people seen walking around with jugs of milk. I had to make due with the beer booth at the end of the room.

    We sampled and tasted at almost every booth-not bothering to stop at the one called “Defcon”, which provided a decontamination area. We collected business cards from the ones we liked so we could remember which ones were the best and go back later to make any purchases before we left. We tried salsas, hot sauces, BBQ sauces and dips on pulled pork, blackened chicken, potato chips, tortilla chips, pretzels, and by the spoonful. Additionally, there were wasabi peas, various wasabi nuts (peanuts, cashews, almonds, etc), spicy crackers, hot suckers complete with a dead, dried scorpion inside, and fudge sauce with chili peppers. If you had something hot to offer, it was at the show.

    We ended up buying more than we intended, including Jim Dandy's BBQ sauces (mild, hot and extra hot), Mudflap Jones' Cajun Kicker sauce and All Purpose Prairie Dust, The Extreme Gourmet's Southwest Chipotle seasoning mix, Lee's Hot Mustard's Cajun Seasoning, and Shudog's Sweet and Sassy Mustard Relish. Finally, although we didn't care for the Chipotle Chile Fudge sauce, the Sweet & Saucy Co. did offer a whole line of flavored fudge and caramel sauces. We couldn't agree on one, so we bought Raspberry Fudge, Cinnamon Caramel and Rum Caramel. Yum! The description on the jar is accurate, it is “so good, it's sinful”. And, yes, you will want to eat it by the spoonful right out of the jar!

    We had a good time and are looking forward to next year. When you plan your next weekend activity, keep it local and find out what's going on in your own backyard. You never know what fun and interesting things you may have been missing.
